Banana Pikelets

What do you do when you went to bed early and woke up at 4am?

Well, you make banana pikelets, of course!


Only half kidding!  I did woke up at 4am one night and couldn't sleep, so I wandered downstairs to the kitchen, opened the fridge and saw some overly ripened bananas.
Ah well, the easiest thing i could think of is turning them into mini pancakes, or pikelets, as the Aussies called them.  These are super duper easy to make.  Just dump everything into a blender, whiz and cook over an omelet size pan with some butter.

I served these with some fresh blueberries, lovely Korean strawberries and aloe vera yogurt.




Easy Banana Pikelets

  • 5 small, very ripened bananas
  • 3 tbsp plain flour
  • 5 tbspn milk
  • 1 large egg
  • 1 heap tsp brown sugar
  • 1 heap tsp unsweetened cocoa powder (optional)

1.  Put everything into the blender and whiz for a few seconds.




2.  Put a knob of butter into an omelet size pan and let it sizzle.  Pour some batter into the pan, swirl it into a full circle and cook until small bubbles are popping on the surface.  This will take about 2-3 min. Gently flip over and cook the other side for 1 min.  Serve onto individual plates and let it cool down.




3.  Assemble some fresh fruits on top of one or two pieces of pikelets and sprinkle some icing sugar on top.  Serve with fresh yogurt and a hot cup of coffee or juice.




I couldn't help taking a few shots of these beauties - sweet Korean strawberries without that sharp tartness like the local ones.  They are expensive - about RM12 for a punnet of just 250g, but absolutely lovely.   I was very tempted to make Strawberry Jam, but then decided to just enjoy them au naturale. 







P.S.  So what's the other benefits of waking up at 4am? Well, by 8am I have already done the following: did a big batch of laundry, boiled a pot of soup for the day, packed my son's school bags, fed him breakfast, got him ready for school, washed up all the breakfast paraphernalia, AND did my morning devotion.  Time for a mid-morning nap ;P

  3. if i wake up at 4am, i probably look like a monster by 1pm! btw, first time knowing of the aloe vera yogurt..eh, can give us nice complexion or not? hehe..then waking up at 4am every day also not a problem !

  4. That's nothing more comforting than to wake up to a nice, warm homemade breakfast. It will be nice to be the one waking up to eat instead of making at least once in awhile huh? I like how you added some chocolate to it, yummy!

  5. Too hard to wake up before 6 am esp during winter lol Though no problem during summer yikes ! Cooking something while everybody's asleep seems a good idea . Your pikelets look great ! Serving it with fresh fruits sounds wonderful :)
